Steven R. Gundry is an American physician and author who trained as a cardiothoracic surgeon before shifting his focus to nutrition and diet-based approaches to chronic disease. He founded the International Heart and Lung Institute and the Center for Restorative Medicine in California, where he sees patients. He is best known for popular diet books including "The Plant Paradox," which argues that plant compounds called lectins contribute to a range of health problems, and for subsequent books on diet, the microbiome, and aging. He hosts The Dr. Gundry Podcast, where he interviews guests on nutrition, gut health, and longevity.
